Even if you don't know the term "time-lapse", you will surely have seen many videos taken or made with this technique. 

It is produced by successive shots (photos) of the same frame at regular intervals and "stitched" them into a normal or higher speed video. This technique (lapsing) creates a smooth playback video in which time runs faster.

So, for example, within a minute you can enjoy the movement of clouds in the sky in the space of a week, a flower blooming or a fruit disintegrating. You can also record a busy street at night, with car lights creating lines.
